Baked Parmesan Eggplant Fries

Ingrediants

Serves: 7 – 8

Ingredients:

  • 2 cups whole-wheat panko breadcrumbs
  • 2 ½ teaspoons kosher salt or to taste
  • 2 tablespoons olive oil
  • 2 cups freshly grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 2 medium eggplants, cut into fries
  • 1 cup whole-wheat flour
  • 6 large egg whites, beaten
preparation
  1. Combine breadcrumbs, salt, Parmesan cheese, pepper and garlic powder in a bowl. Add oil and stir until well combined.
  2. Line a large baking sheet with a sheet of parchment paper.
  3. Dredge the eggplant slices in whole-wheat flour, one at a time. Next dip in egg whites. Shaking off excess egg white, dredge in the breadcrumb mixture and place on the baking sheet. Press lightly while dredging so that it sticks onto the eggplant slices.
  4. Bake the eggplant fries in an oven that has been preheated to 450° F for 20 to 25 minutes or until golden brown.
  5. Turn the fries a couple of times while baking.
