Salmon on Spinach Salad
INGREDIENTS FOR 4 PEOPLE
- 1 organic lime
- 10 g fresh ginger
- 1 Shallot
- Juice of 1 orange
- salt
- pepper from the grinder
- 100 g Baby spinach leaves
- red and yellow pepper
- 4th Salmon fillets (approx. 160 g each)
- 50 g Flour
- 2 tbsp olive oil
PREPARATION

- Wash the lime with hot water, rub dry, finely grate the peel and squeeze out the juice. Peel the ginger and grate finely. Peel and finely dice shallot. Mix the ginger, shallot, orange juice, lime juice and zest together. Season to taste with salt and pepper. Clean and wash the spinach and spin dry. Halve the peppers, clean, wash and cut into fine cubes
- Rinse fillets with cold water, pat dry, season with salt and pepper. Put the flour on a flat plate. Turn the fillets in it. Heat oil in a large pan. Fry fillets over medium heat for 2-3 minutes on each side
- Mix the spinach, paprika and dressing and arrange on plates with the salmon fillets
